Tuscan Bean Soup

Today I am starting a new feature here at ADD Moms called Pantry Meals. All moms, ADD or not, have days when things get out of control and they find themselves searching for something for dinner with not much in the house.

Each Friday I will provide a recipe for a quick and easy pantry meal. Just add the ingredients to your grocery list. You don’t have to make the meal that week; it’s designed to live in your pantry until you have one of those days. Then you can pull out the ingredients and have dinner ready in a flash.

Today’s recipe is Tuscan Bean Soup. I’ve been making it for years and it’s one of my family’s favorites. Even my son, the meat eater, enjoys this and asks for it.

It’s quick, easy, inexpensive and delicious. What more could you want?

Ingredient (Grocery) List

1 large jar of Great Northern Beans (the white ones). If you can’t find the large jar, buy about 4 cans of white beans
1 can diced tomatoes
1 box frozen spinach
Parmesan cheese (optional)

Directions:

Dump the beans and tomatoes (with liquid) in a large pot. Add the spinach. Add enough water to make a soup like consistency. I fill the bean jar with water and add it. Season with salt and pepper. You can also add oregano or rosemary if you like.

Heat until the spinach is cooked. Serve with Parmesan cheese on top.

This recipe serves my family of 4 and I have leftovers.
