Pantry meals can come in handy any time of the year, especially if you have ADHD. It’s a good idea to always have a pantry meal or two on hand for those days when you suddenly realize it’s dinner time and you have nothing to cook or for when you just don’t feel like it.
With some of the unbearably hot days we’ve had lately, cooking is the last thing I want to do.
Tuna with olives is an easy pantry meal. Your family may not consider such light fare dinner, but it works at my house.
Here’s how you make it:
1-2 cans of tuna, drained
1 small jar of artichoke hearts, chopped
1 small can of black or Kalamata olives
Mayonaise to taste
Everything can be stored in the pantry – even the mayo if it’s not opened.
Toss everything together and you’re done. You can serve it on lettuce or bread or just by itself. I had some for dinner tonight with crackers.
