One of the categories on this blog used to be Pantry Meals. A pantry meal is one that you can keep in your cupboard and make quickly, like spaghetti. I’ve decided to expand the category and change the name to Recipes.
ADD Moms is not a food blog. It’s a blog about ADHD and women, especially those of us with families. A recipe doesn’t quite seem to fit in with ADHD, but in a way it does.
My mom, who had ADHD, planned each day’s meal on the fly. There was no weekly meal plan, no weekly shopping. Each day she would decide what to cook and then go to the store to get it. Some days when she couldn’t think of anything, there would be a real panic starting early in the afternoon. Not a very efficient way to do things.
I do make a weekly meal plan, but even so, there are days when I need something in a hurry or when I just don’t feel like cooking at all. I feel like someone has taken away some of my allotted 24 hours per day and I’m rushing to catch up.
Anyway, thinking that maybe you might feel the same way, I’ve decided to throw in a recipe now and then that works for me, hoping it will work for you too.
I don’t do measurements, so sorry if that makes you crazy.
Here’s my recipe for dill and caper chicken. It’s not too dilly and really good.
Ingredients:
Boneless skinless chicken breasts or chicken tenders
Olive oil
Salt
Lemon pepper
Dill
Garlic powder (eliminate the salt if you have garlic salt)
Capers
Cream or half and half
Directions:
Mix together the salt, lemon pepper, dill, and garlic powder. Pretty equal amounts of each, maybe a little less salt. Season the chicken with the mixture. Cook chicken in the olive oil until it’s done. Add a couple of teaspoons of capers with some of the liquid and just enough cream to cover the bottom of the pan. Just to add a little sauce to the recipe.
I served mine with noodles and a salad.
This is so good I would serve it to company. My family loved it.
